Turkey Roulades

Ingredients

4 pieces Meat, turkey, breasts

2 pinch Salt, table

1 pinch Spices, pepper, black

1 teaspoon Mustard

2 spoons Butter, unsalted

125 ml Alcohol, Wine, White

1 spoon Carp, soaked

1 handful Arugula

4 pieces Carrot, fresh

2 piece Green, raw
Steps

Place the arugula in a colander, wash it thoroughly, and let it dry. Finely chop half of the arugula. Peel the carrots and trim both ends, then clean and wash the celery stalks. Cut the carrot lengthwise into quarters, and halve the celery stalks lengthwise before cutting them into pieces the same length as the carrot.

Wash the turkey cutlets and dry them well with paper towels. Then pound them until they are quite thin and season with salt and pepper to taste. Spread mustard on them and sprinkle with the chopped arugula. Place a piece of carrot and celery on each cutlet. Roll them up and secure with toothpicks or tie them.

Place a large pan on the stove and melt the butter in it. Arrange the turkey roulades in the pan and sear them on all sides (about 2 minutes). Then pour in the wine, cover, and simmer for an additional 15 minutes.

Slice the roulades into individual pieces, serve on plates, and offer the tuna sauce on the side. Use capers and the reserved arugula leaves for decoration.
