Turkey Roulades with Cheese and Herbs
A flavorful filling of herbs and cheese will infuse the inside of the meat with a divine aroma, while the outside will become crispy and baked to perfection in the oven.

Steps

Slice the turkey breast to obtain thinner cutlets. Rinse the cutlets under running water and dry them with a paper towel. Preheat the oven to 180°C. Grease a baking dish well with oil.

Grate the cheese into a bowl, then rinse the sage and parsley and chop them coarsely. Add both to the bowl with the cheese and mix with your fingers to distribute the ingredients evenly. Drizzle the filling with lemon juice.

Season the turkey cutlets with salt, then place the cheese and herb filling on one side of the cutlet, spreading it evenly. Roll the meat into a roulade and secure it with toothpicks if necessary.

Peel and thoroughly wash the potatoes, then place them in a pot and fill it with enough water to cover all the potatoes. Salt the potatoes and cook them for 25 minutes. Meanwhile, finish preparing the roulades.

Carefully remove the baking dish from the oven and mix a tablespoon of tomato paste into the oil, then place the turkey roulades in the dish. Return the dish to the oven and bake for 15 minutes. After this time, open the oven and turn the roulades to the other side. Bake for another 15 minutes.

Rinse, shake off, and coarsely chop a second, smaller bunch of parsley. Drain the potatoes and serve them on plates, then remove the baking dish from the oven. Spoon the juices from the baking dish over the potatoes. Place the roulades next to the potatoes, then sprinkle the dish with freshly chopped parsley. Serve warm with a glass of dry white wine.

Advice
Make sure to secure the roulades well with toothpicks to prevent the cheese from leaking out. Soft-boiled carrots, cut into rings and salted before cooking, also pair excellently with this dish.
