Turkish Dessert with Quinces
This dessert, known in Turkey as ayva tatlısı, is a great example of how important the method of preparation is in order to make the most out of the ingredients we have available.

Ingredients

150 g Sugar, brown

8 pieces Spices, cloves, ground

1 teaspoon Spices, cinnamon, ground
Steps

Clean, wash, and peel the quinces, then cut them in half. The cut should be as even as possible. Scoop out the core and enough flesh so that 2 to 3 tablespoons of liquid can fit in the hollow. Place two cloves in each hollow, then mix cinnamon and sugar and fill the hollows with the mixture.

Preheat the oven to 110 °C. Take a sufficiently large deep ovenproof pan (it should not have a plastic handle!), and place all 4 quince halves in it at the same time. Pour a glass of water into the pan and make sure the water does not overflow over the edges of the quinces into the hollows. Add some peels and seeds of the quinces to the water, which will color the quince syrup.

Cover the pan with a lid and bake the quinces in the preheated oven on the middle rack for at least 3 hours or until they turn red and the syrup thickens. Check them every hour during baking and add a little water to the pan if necessary.

Remove the pan from the oven and let the quinces cool. Arrange the quinces on plates, pour the syrup over them, and serve.

Advice
This prepared dessert can be served with whipped cream or vanilla ice cream, or, as in Turkey, it can be stuffed with ground walnuts and sprinkled with pine nuts. It is even better if the quinces are slowly baked for a longer time (up to 6 hours), as this way they develop their aroma the most. During baking, the quinces turn red due to the added sugar.
