Turkish Scrambled Eggs with Vegetables (Menemen)
Menemen is a Turkish version of scrambled eggs. It is made with eggs, tomatoes, and peppers, but differs in the use of spices. In Turkey, menemen is usually prepared for breakfast and served with fresh or toasted bread, which is torn into pieces and dipped into the delicious sauce. The scrambled eggs can also be enhanced with the addition of feta cheese or Greek yogurt.

1 piece Onion, raw

3 pieces Bell pepper, green, fresh

1 pinch Spices, chili powder

Peel the onion and chop it finely. Wash and clean the vegetables. Remove the seeds from the tomatoes and cut them into pieces, do the same with the peppers.

Place a pan on the stove and pour in the olive oil. Add the chopped onion to the heated oil and sauté until it becomes translucent and soft.

Add the chopped peppers to the pan. Stir-fry everything together until the peppers soften slightly, then add the chili flakes and tomatoes. Season with salt and pepper and cook the vegetables until a medium-thick sauce forms. Be careful not to let the tomatoes completely break down.

Crack the eggs into a bowl and whisk them with a hand whisk. Push the vegetables to one side of the pan. Reduce the heat to medium and pour the whisked eggs into the pan. Cook while stirring until the eggs are slightly set but still juicy, then mix them with the vegetables. The dish should be juicy, so be careful not to overcook the eggs.

Remove the pan from the heat and serve the prepared dish on plates. Sprinkle chopped cilantro or parsley on top. Serve with fresh or toasted bread.
