Tuscan Bean Soup
An excellent Italian spoon dish, especially suitable for cold winter days, as the warm soup heats the chilled body from within. Since it contains no meat, the dish is also suitable for vegetarians.

1 piece Onion, raw

2 piece Green, raw

2 piece Carrot, fresh

2 pod Garlic, fresh

1 teaspoon Spices, paprika

400 g Tomato, pieces - can

1 l Soup base, chicken, cube

400 g Beans, grains, cooked

0.5 teaspoons Salt, table

2 pinch Spices, pepper, black

Steps

Peel the onion, and clean and wash the celery and carrots. Roughly chop the vegetables. Peel the garlic and crush it with a knife. Drain the beans from the can, rinse under running water, and drain well. Strip the leaves from the thyme and rosemary sprigs and finely chop them.

Heat olive oil in a pot. Add the onion and celery, and sauté the vegetables over moderate heat, stirring occasionally, for 5 minutes until slightly softened. Then add the carrots, garlic, and herbs. Continue to sauté the vegetables, stirring occasionally, for another 10 minutes.

Add paprika, tomato, and broth to the pot. Stir well, increase the heat, and let the liquid come to a boil. Add the drained beans, reduce the heat, and simmer gently for 20 to 25 minutes until the vegetables are tender. Season with pepper and salt.

Tear the leaves from the head of chard and rinse them under running water. Cut out the tough stems from the leaves, and slice the remaining leaves into strips. Stir them into the soup about 10 minutes before the end of cooking.

Once the vegetables are tender, taste the soup and adjust the seasoning with more salt or pepper if needed. If desired, remove the crushed garlic cloves before serving. Ladle the soup into deep bowls or cups and serve with toasted slices of (stale) bread.
