Tuscan Bean Stew with Barley
A thick stew made from vegetables, beans, pancetta, barley, and garlic. It is highly nutritious and has an excellent flavor, perfect for the colder months when we seek to nourish and warm ourselves with a bowl of good stew.

Ingredients

2 spoons Oil, olive

1 piece Carrot, fresh

pieces Green, raw

1 piece Onion, raw

3 pods Garlic, fresh

100 g Meat, pork, smoked bacon

800 g Beans, grains, cooked

180 g Barley

2 spoons Tomato, concentrate

2 twigs Rosemary, fresh

1250 ml Soup base, chicken, cube
Steps

Clean and wash the vegetables. Finely chop the onion and garlic separately, and cut the carrot and celery into small pieces. Also, cut the pancetta into small pieces.

Drain the soaked barley and rinse it well under running water. If using canned beans, rinse them under running water and drain.

Heat oil in a large pot. Add the onion, carrot, and celery. Sauté the vegetables over low to medium heat, stirring occasionally, until they soften slightly.

Add the pancetta and garlic to the pot. Sauté the ingredients for another 2-3 minutes, stirring, then add the beans to the pot. Pour in 500 ml of broth and let the contents come to a boil.

Remove the pot from the heat. Roughly blend the beans and vegetables with an immersion blender, leaving some whole beans and vegetable pieces.

Add the barley to the pot. Stir in the tomato paste, pour in another 750 ml of broth, and season the stew with salt, pepper, and rosemary. Wait for it to come to a boil, then reduce the heat to medium, cover the pot, and let the stew cook for 30-40 minutes or until the barley is completely tender.

Serve the prepared stew in deep bowls or soup cups. Drizzle a little olive oil on top. Serve with bread.
