Tuscan Kale Soup with Sausage
The soup should be so thick that a spoon can almost stand upright in it. This is a simple and hearty peasant dish, perfect for the winter season and capable of feeding many hungry mouths.

1 spoon Oil, olive

450 g Carniolan sausage

1 teaspoon Spices, chili powder

1 piece Onion, raw

2 pod Garlic, fresh

3 slices Meat, pork, smoked bacon

700 ml Water

800 ml Soup base, chicken, cube

Peel the sausage and crumble the meat into smaller pieces with your fingers. Cut the bacon slices into chunks. Peel the onion and garlic, then finely chop them separately.

Pour oil into a pot and sauté the meat and chili in it. Once all the meat pieces are nicely browned, remove them from the pot and keep them warm on a plate.

Leave about 2 tablespoons of fat in the pot and discard the rest. Add the chopped onion, garlic, and bacon to the heated fat. Cook the ingredients over low heat for about 15 minutes, or until the onion becomes translucent and soft. Stir them well several times during cooking.

Meanwhile, peel the potatoes, wash them, and cut them into pieces. Pour the broth and water into the pot with the sautéed ingredients. Use a spatula to scrape the bottom well to release all the caramelized bits that formed during cooking. Once the liquid boils, add the potatoes to the pot. Simmer them gently until they soften (about 20 minutes).

While the potatoes are cooking, wash the kale, clean it, and cut it into strips. Mash about half of the cooked potatoes with a masher, leaving the other half in chunks. Add the chopped kale, sautéed sausage pieces, and bay leaf to the pot. If needed, add a bit more broth or water. Once the liquid boils, cover the pot and simmer the soup gently for another 10 to 15 minutes—until the kale softens.

Season the prepared soup to taste and optionally add a bit of lemon juice. Serve it in soup bowls or deep plates and accompany with bread.
