Tuscan-Style Cutlets

Ingredients

4 pieces Meat, beef, thigh

15 g Butter, unsalted

2.5 dl Alcohol, Wine, White

4 slice Meat, pork, smoked bacon

1 piece Tomato, red

200 g Cheese, mozzarella

1 teaspoon Spices, pepper, red or cayenne

0.5 teaspoons Spices, pepper, black
Steps

Wash and dry the meat. Pound the cutlets well between two sheets of transparent foil. Rub them with salt and pepper on both sides. Wash the tomatoes, remove the stems, and slice them into 0.5 cm thick slices. Drain the mozzarella and slice it into 0.5 cm thick slices.

Heat a pan and melt the butter in it. Be careful not to let the butter brown. Cook the cutlets for 3 minutes on each side, then place them in a baking dish. Pour the wine into the pan, quickly bring it to a boil, and pour it over the cutlets. Place a slice of prosciutto on each cutlet, top with tomato slices, and layer with mozzarella slices. Sprinkle the cutlets with peppercorns on top.

Preheat the oven to 200 °C. Place the baking dish with the prepared cutlets in the preheated oven and bake for 15 minutes. Then remove them from the dish and serve. Serve the sauce from the baking dish alongside the cutlets.
