Twice-Baked Potatoes with Cheese and Bacon
Twice-baked potatoes can be served as a standalone dish or as a side to roasted meat. In the first case, count two halves per person, and in the second, only one, as the stuffed potatoes are quite filling. In both cases, don’t forget to serve a bowl of salad, which pairs perfectly with the dish.

Preheat the oven to 200 degrees Celsius. Wash the potatoes thoroughly under running water (scrub if necessary) and dry them with paper towels. Lightly coat the skins with oil, then place the potatoes on a baking tray and bake in the preheated oven for 1 hour. They are done when the flesh inside is completely soft. This is easiest to check by inserting a thin knife into the potato. If it pierces easily, the potatoes are baked.

Cut the bacon into pieces and fry until crispy in a pan. Drain the fried bacon on paper towels. In a bowl, add thinly sliced butter, the fried bacon, and sour cream. Clean, wash, and finely chop the spring onions.

Once the potatoes are baked, remove them from the oven and let them cool slightly. Lower the oven temperature to 180 degrees Celsius. Cut the baked potatoes in half lengthwise and scoop out the flesh, leaving about a 1 cm thick wall. Add the scooped-out flesh to the bowl and mix with the butter, sour cream, and bacon. Add 2/3 of the grated cheese, the chopped spring onion, and milk, then season the mixture with pepper and salt to taste. Mix everything well to create a uniform filling, which is then used to stuff the potato halves.

Place the potato halves on a baking tray and sprinkle the remaining grated cheese over the filling. Bake the potatoes in the preheated oven for another 15 to 20 minutes. Serve the dish while still warm, accompanied by a bowl of your favorite salad.
