Tzatziki Sauce with Feta
If you have ever visited Greece, you have most likely tried tzatziki. It is a refreshing Greek cucumber salad traditionally served with grilled dishes. It is also excellent as a sauce for dipping pieces of pita bread. The secret to a good tzatziki lies in properly draining the cucumbers and using good Greek yogurt, which gives the dish its characteristic creamy texture.

Ingredients

1 piece Sweet potato, peeled, fresh

400 g Yogurt, plain, from whole milk

pieces Juice, lemon

1 pod Garlic, fresh

pieces Dill, fresh

60 g Cheese, feta

Peel the cucumber if necessary and cut it in half lengthwise. Use a spoon to remove the seeds and discard them. Grate the hollowed halves coarsely and sprinkle with 1/4 teaspoon of salt. Let it sit for at least 10 minutes to allow excess liquid to drain from the cucumber. Meanwhile, peel the garlic and finely chop it along with the dill (mint, parsley).

Squeeze the salted cucumber well with your hands (you can also use cheesecloth or a clean cloth) and transfer it to a bowl. Add the yogurt, chopped garlic and dill, lemon juice, and crumbled feta. Mix the ingredients well to form a uniform mixture, seasoning with salt and freshly ground pepper to taste.

The tzatziki can be served immediately or covered and refrigerated for 2 hours to allow the flavors to develop. When serving, drizzle a little high-quality olive oil over the top.

Advice
If the cucumber has a thick skin, peel it before grating. Dill can be substituted with mint or parsley.
