Udon Noodle Soup
The full name of the basic Japanese udon noodle soup is Kake Udon. It is a simple dish that is quickly prepared, but no less delicious because of it.

Ingredients

300 g Pasta, somen noodles

1.2 l Water

4 teaspoon Soup base, chicken, cube

120 ml Soy sauce, shoyu

4 spoon Alcohol, Sake

1 piece Onion, young
Steps

Place a large pot of salted water on the stove and bring it to a boil. Add the udon noodles to the boiling water and cook for about 15 minutes (or as indicated on the package). Drain the cooked noodles well and cover them to keep them warm. Clean the green part of the spring onion, wash it, and slice it into thin rings.

Place a new pot with 1.2 liters of water on the stove and mix in the dashi powder. Stir until the powder is completely dissolved. Bring the dashi broth to a gentle boil over medium heat. Add soy sauce and mirin. Stir well, and once the soup boils again, cook for another minute, then remove from heat.

Distribute the noodles into bowls, pour the hot soup over them, and sprinkle with the chopped spring onion. Serve immediately.

Advice
Instead of dashi powder and water, you can also use pure fish or vegetable broth.
