Upside-Down Pastry with Ganache Glaze

Steps

For the pastry, we need 220 g of pumpkin puree, made from baked pumpkin. Clean a smaller pumpkin, wash it, cut it into smaller pieces, and bake at 200°C for about 20 minutes (bake until the pumpkin softens). Scoop the baked pumpkin flesh out of the skin with a spoon and blend it in a food processor until smooth.

Add the remaining ingredients to the food processor: almond flour, maple syrup, melted coconut oil, spices, and eggs. Mix all the ingredients well until you get a smooth and uniform batter. Fill greased muffin molds with the batter. Bake the pastries in a preheated oven at 160°C for 20 to 30 minutes.

Let the baked pastries cool slightly in the molds, then quickly flip them upside down. Allow them to cool completely.

While the pastries are cooling, prepare the ganache glaze. Chop the chocolate into pieces and place them in a bowl. Heat the coconut milk in a small pot. Pour the hot milk over the chocolate, wait a few seconds, then add a pinch of salt and mix well until you get a completely smooth and silky chocolate glaze.

Pour the chocolate glaze over the cooled pastries, garnish with a pinch of cardamom and a piece of orange, and serve.
