Upside-Down Plum Cake

Steps

Preheat the oven to 180 degrees Celsius. Set the rack to the middle height. Grease a round cake pan with a diameter of 22 cm well. Line the bottom of the pan with baking paper. Melt 50 g of butter in a cup. Pour the melted butter into the prepared pan and tilt the pan to spread it evenly over the bottom. Sprinkle brown sugar over the melted butter. Wash the plums, cut them in half, and remove the pits. Cover the bottom of the pan with the plum halves (cut side down).

Sift the flour into a bowl and mix it with baking powder and ground almonds. In another bowl, use an electric mixer to combine 125 g of butter and sugar. Mix on high speed for about 4 to 5 minutes until you get a slightly creamy mixture. Gradually (one by one) mix in the eggs (each egg should be mixed in for about half a minute). Then add half of the flour, baking powder, and almond mixture and mix it into the egg mixture using a spatula or a hand whisk. Repeat the same process with the other half.

Cover the plums in the pan with the prepared batter. Use the back of a spoon to spread the batter evenly over the pan and smooth the top. Place the pan in the preheated oven for 50 minutes. The cake is done when the surface turns golden brown, and a toothpick inserted into the batter comes out clean when removed.

Remove the baked cake from the oven and let it cool in the pan for 10 minutes. Invert a large serving plate and place it on top of the pan. Carefully flip the pan, making sure not to burn yourself. Cut the cake into pieces of any size, serve on plates, and accompany with whipped cream or ice cream.

Advice
The butter is easiest to soften by taking it out of the refrigerator at least one hour before preparation and letting it sit at room temperature to soften.
