Upside-Down Strawberry Tarts
Upside-down tarts with strawberries are a variation of the popular French upside-down apple tart (orig. Tarte Tatin). The preparation is quick and easy, making them especially suitable for a home gathering.

Ingredients

30 g Butter, unsalted

55 g Sugar, white

1.5 spoons Water

0.5 pod Vanilla, extract, natural

400 g Strawberries

375 g Dough, puff
Steps

Preheat the oven to 200 degrees Celsius. Grease the baking dishes with butter.

Place a saucepan on the stove and add butter, sugar, and water. Split the vanilla bean in half and scrape out the seeds with the tip of a knife, adding both the seeds and the pod to the saucepan. Heat the mixture over moderate heat, stirring slowly until all the sugar dissolves. Once it boils, cook for another 2 to 3 minutes, then remove the saucepan from the heat and discard the vanilla pod.

Rinse the strawberries quickly under running water if needed, clean them, and cut them in half. Arrange the strawberry halves in the greased baking dishes (cut side up). Pour the sugar syrup over the strawberries.

Roll out the thawed puff pastry on a lightly floured surface to about 0.5 cm thick. Use a round cutter to cut out four circles, each 12 cm in diameter. Carefully place the pastry circles over the strawberries. Fold the edges of the pastry inward and press them against the sides. Make sure the pastry covers all the strawberries. Bake the tarts in the preheated oven for 20 to 25 minutes, until the pastry is golden brown and crispy.

Remove the baked tarts from the oven and let them rest for 5 to 10 minutes to cool slightly. Then place an upside-down plate over each baking dish and carefully flip them over. Be cautious to avoid getting splashed by the syrup.

Serve the warm tarts with a scoop of ice cream, whipped cream, or Greek yogurt.
