Valentines Cake with Strawberries

Steps

Preheat the oven to 180 degrees Celsius. Grease the mold well with butter. In a smaller bowl, sift the flour and mix it with baking powder. In a small pot, slowly melt the butter over low heat. Once the butter is melted, remove the pot from the heat.

In a larger bowl, crack the eggs and whisk them with an electric mixer until frothy with sugar and vanilla sugar. Mix until a light foam forms that smoothly drips off the whisk. In three additions, gently fold the flour and baking powder mixture into the egg cream. With the last addition of flour, also mix in the melted butter. The batter should be smooth, without lumps.

Pour the sponge cake batter into the greased mold and bake in the preheated oven for 20 to 25 minutes. The sponge cake is done when it turns golden brown on the surface, and a toothpick inserted into the cake comes out clean when removed.

Remove the mold with the sponge cake from the oven and let it cool completely. Wash, clean, and dry the strawberries. Cut them in half lengthwise. In a bowl, whip the sweet cream with cream stabilizer and vanilla sugar until stiff using an electric mixer.

Remove the sponge cake from the mold and place it on a serving plate or platter. Fill a piping bag with the whipped cream and pipe dollops of cream onto the sponge cake using a star-shaped nozzle. Finally, decorate the cake with the strawberry halves and serve.
