Valentines Cherry Cake

225 g Butter, unsalted

225 g Sugar, white

4 pieces Egg, fresh

225 g Flour, Wheat, bread flour

0.5 teaspoons Baking powder

250 g cherries, fresh

110 g Nuts, almonds

3 drops Vanilla, extract, natural

1 spoon Milk, whole milk
Steps

Preheat the oven to 180°C. Grease a round baking dish with a diameter of 20 cm.

Place butter and sugar in a bowl and mix with an electric mixer until light and fluffy. Beat the eggs in a separate bowl and then gradually mix them into the butter mixture. In a third bowl, sift the flour and mix it with baking powder. Slowly (spoon by spoon) add the flour mixture to the egg-butter mixture.

Cut the cherries in half. Gently fold them into the batter along with the ground almonds using a hand whisk. Finally, mix in the milk and almond extract. Pour the batter into the prepared baking dish. Tap the dish firmly and smooth the surface with the back of a spoon.

Bake the sponge cake in the preheated oven for 1 hour, then cover it with foil and bake for an additional 30 minutes until it starts to pull away from the sides of the dish.

Let the baked sponge cake cool in the dish for 15 minutes, then turn it out onto a wire rack and let it cool completely.

Place the sponge cake on a work surface and cut it horizontally. Using a heart-shaped cookie cutter of any size, cut out cakes from both halves of the sponge. Arrange them on a serving plate and serve.
