Ingredients
Cookies
-
125 g Butter, unsalted
-
125 g Sugar, white
-
2 piece Egg, fresh
-
125 g Wheat flour, white, multi-purpose
-
1 teaspoon Baking powder
-
1 pinch Salt, table
-
6 pieces Passion fruit, fresh
-
1 teaspoon Vanilla, extract, imitation
-
pieces Milk, whole milk
Cream
-
160 g Butter, unsalted
-
400 g Powdered sugar
-
pieces Vanilla, extract, imitation
-
50 ml Milk, whole milk
Steps
-
Preheat the oven to 180 degrees Celsius. Place paper liners in the muffin tin (or grease them with butter). Sift the flour and baking powder into a bowl. Add salt and mix everything well. Cut the passion fruits in half and scoop out the pulp with a spoon, placing it in a fine sieve set over a bowl. Press the pulp well with a spoon so that only the fruit puree remains in the bowl, and discard the seeds left in the sieve.
-
Beat the softened butter and sugar with an electric mixer until a light and creamy mixture forms. Gradually mix in the eggs, one at a time.
-
First, mix the dry ingredients into the egg-butter mixture, then add the passion fruit pulp and vanilla flavoring. If the mixture is too thick, add a little milk.
-
Fill the paper liners with the batter. Bake the cupcakes in the preheated oven for 20 minutes or until a toothpick inserted into the center comes out clean. Let the baked cupcakes cool in the tin for about 10 minutes, then transfer them to a wire rack to cool completely.
-
Finally, prepare the buttercream to decorate the cupcakes. In a bowl, beat the softened butter with an electric mixer until smooth, then add the sifted sugar and continue mixing until a light and creamy butter mixture forms. Mix in one or two drops of red food coloring (just enough to give the cream a slight red tint) and enough milk to create a smooth and light buttercream.
-
Fill a piping bag fitted with a star tip with the buttercream. Pipe the cream onto the cooled cupcakes, arrange them on a large tray or platter, decorate with sugar sprinkles as desired, and serve.

Advice
Instead of passion fruit pulp, you can use strawberry or raspberry puree. Replace vanilla flavoring with homemade vanilla extract.
