Valentines Glass Cookies

Ingredients

150 g Wheat flour, white, multi-purpose

Steps

In a bowl, mix the flour, baking powder, and salt. In another bowl, use an electric mixer to cream the softened butter and sugar until smooth. Add the egg and vanilla extract, and continue mixing on medium speed for 2 minutes until the mixture is creamy. Then, add the dry ingredients and mix on low speed until a smooth dough without lumps forms. Transfer the dough to a floured work surface, quickly knead it, and shape it into a ball. Wrap it in plastic wrap and refrigerate for 2 hours.

Preheat the oven to 180°C (350°F). Line a low baking sheet with parchment paper. Place the candies in a clear bag and crush them into smaller pieces using a kitchen mallet.

Roll out the dough on a floured surface to about 0.5 cm thickness. Use a larger heart-shaped cookie cutter to cut out cookies from the dough. Use a smaller heart-shaped cutter to cut out smaller hearts in the center of each cookie (see image). Carefully remove the inner hearts and transfer the cut-out cookies to the baking sheet. Fill the centers with the crushed candies. Place the baking sheet in the preheated oven and bake the cookies for 10 to 12 minutes.

When the dough turns slightly golden and the candies have melted, remove the baking sheet from the oven. Let the cookies cool in the baking sheet for about 10 to 15 minutes, allowing the melted candies to cool, harden, and bond well with the dough. Then, transfer the cookies to a wire rack and let them cool completely.
