Vanilla Cream for Baskets and Boats

2 piece Egg, egg yolk, fresh

1 piece Vanilla, extract, natural

80 g Sugar, white

40 g Koruzni škrob

350 ml Milk, whole milk

300 ml Sweet cream

20 g Butter, unsalted

In a bowl, whisk the egg and egg yolk. Split the vanilla bean lengthwise and scrape out the seeds with the tip of a knife. Add the seeds along with the sugar to the bowl with the eggs. Mix well with a whisk, then add the starch and mix again until all lumps are dissolved.

Pour the milk and 100 ml of sweet cream into a pot. Add the vanilla bean (without the seeds) and heat the liquid, stirring occasionally, until it reaches a boil. Be careful not to let it boil over!

When small bubbles appear at the edge of the pot, remove it from the heat and take out the vanilla bean. Slowly pour about 1/4 of the hot liquid into the bowl with the eggs while continuously whisking.

Return the hot milk and cream mixture to the heat and slowly pour in the egg mixture while constantly stirring with a whisk. Cook for about 5 more minutes until the cream thickens and starts to bubble slightly. The mixture should be completely smooth and free of lumps.

Stir the butter into the hot cream.

Immediately pour the prepared cream into a clean bowl or container and cover it with plastic wrap (to prevent a skin from forming on the surface). Let the cream cool to room temperature or in the refrigerator.

Just before using the cream, whip 200 ml of sweet cream in a bowl and slowly fold it into the cooled cream. For easier piping into baskets or boats, transfer the cream into a piping bag. Store it in the refrigerator until ready to use.

Advice
While cooking the cream, stir it with a whisk, drawing a figure-eight in the pot. Make sure to mix well at the bottom to prevent the cream from burning. For a more intense vanilla flavor, you can mix a teaspoon of vanilla extract into the egg mixture, and part of the sugar can also be replaced with vanilla sugar.
