Vanilla Sandwich Cookies
We present you with a recipe for simple, crunchy, and crumbly sandwich cookies with jam that will delight anyone who has the chance to try them. Traditionally, these cookies are made with lard, which gives them their authentic flavor, but you can also use butter instead.

Steps

Add granulated sugar and vanilla sugar to softened butter (or lard) and mix well with a spatula or electric mixer until you get a light and fluffy mixture.

Mix in the egg and egg yolk. Once you have a light and fluffy cream, gradually start adding the sifted flour. Mix slowly with a wooden spoon or spatula until all the flour is incorporated into a crumbly dough. Transfer it to a floured surface and knead by hand into a smooth and pliable dough. The prepared dough can be used immediately or wrapped in plastic wrap and stored in the refrigerator overnight to cool and firm up.

Roll out the dough on a floured surface to about half a centimeter thick, then use a round cutter (maximum 4 centimeters in diameter) or a shot glass to cut out small round cookies. Place them on a baking sheet lined with parchment paper.

Bake the cookies for 13-15 minutes in an oven preheated to 180 degrees Celsius. It's important that the cookies do not brown during baking but remain white. Let the baked cookies cool.

Sandwich two cookies together with jam, then roll the cookies in powdered sugar. You can enjoy the cookies immediately, but if you wait a few days, they will be even better as the cookies will soften.
