Vasilopita (Greek New Years Cake)
In Greece, on the first of January (the day of Saint Basil), they treat themselves to a round almond cake called vasilopita for breakfast, which hides a coin inside. It is believed that whoever gets the piece with the coin will live in satisfaction and abundance throughout the coming year.

Ingredients

220 g Butter, unsalted

200 g Sugar, white

380 g Wheat flour, white, multi-purpose

6 pieces Egg, fresh

2 teaspoons Baking powder

240 ml Milk, whole milk

0.5 teaspoons Baking powder

1 spoon Juice, lemon

40 g Nuts, almonds, blanched

Preheat the oven to 180 degrees Celsius. Grease a round cake pan (25 cm in diameter) well with butter.

In a bowl, cream the softened butter and sugar until fluffy. Sift the flour over the mixture and slowly mix it in at low speed. Gradually (one by one) add the eggs (mixing each in for about half a minute). In a small bowl, mix the baking powder and milk, then add this mixture to the egg-butter mixture. Finally, in another small bowl, mix the lemon juice and baking soda and add this to the batter as well.

Pour the prepared batter into the greased pan and bake in the preheated oven for 20 minutes. Remove the pan from the oven and sprinkle almond flakes and sugar on top. Bake the cake in the preheated oven for another 20 to 30 minutes.

Once the cake is baked, remove it from the oven, let it cool in the pan for 10 minutes, then transfer it to a serving plate or platter. Use a knife to make a hole in the cake and insert the coin. Cover the hole with dough and almond flakes. Serve the cake while still warm, and dust it with powdered sugar before serving if desired.
