Veal Cutlets in Mushroom Sauce

Steps

Season the veal cutlets with salt and pepper on both sides. If desired, you can pound them with a kitchen mallet beforehand, but this is not necessary.

Clean the mushrooms with a damp cloth to remove any dirt, then halve them and slice them into slightly thicker pieces. Peel the garlic and onion, and finely chop them separately.

Place a large pan on the stove and heat it well. Add oil and wait for it to heat up, then place the cutlets in the pan and quickly sear them on both sides. If you have more cutlets, cook them in two or three batches. Once cooked, remove them from the pan, cover, and let them rest to become tender.

In the same pan used for the cutlets, add a piece of butter and wait for it to melt. Sauté the chopped onion in the hot fat first, then add the garlic and cook until fragrant. Add the sliced mushrooms and sauté everything together, stirring occasionally, for about 5 minutes. The mushrooms should lightly brown and soften.

Stir in the mustard with the ingredients in the pan, then pour in water or broth. Use a spatula to scrape the bottom of the pan to release any caramelized bits that formed during cooking. Season to taste. Once the sauce comes to a boil, cover the pan and let it simmer gently for about half an hour.

Take about two tablespoons of the sauce and mix it smoothly with a teaspoon of starch. Slowly pour the mixture back into the pan while stirring. Let the sauce cook for 1-2 minutes, then place the cutlets in the pan and simmer for 2-3 minutes.

Serve the cutlets with the sauce on plates. Pair the dish with mashed potatoes, gnocchi, rice, or buckwheat porridge.
