3 dl Alcohol, Beer

First, thoroughly wash the medallions and dry them with paper towels. Season them with salt and pepper to taste.

Place a deep pan on the stove and melt the butter. Once the butter starts to foam, add the medallions to the pan and cook them for about 3 minutes on each side.

Pour a little beer into the pan, cover it, and simmer the medallions over moderate heat for 40 minutes. Gradually add the remaining beer during the simmering process.

Arrange the braised medallions on serving plates and pour the sauce over them. Serve the dish with your chosen side.
