Vegan Banana Cake

Preheat the oven to 180 degrees Celsius. Grease a deep rectangular baking pan (24 x 12 cm) with coconut oil.

Peel the bananas and slice them into rounds, then add them to a bowl and mash them with a fork into a smooth fruit puree. Add ground flaxseeds, milk, vanilla extract, coconut oil, and maple syrup, and mix the ingredients until smooth. Then gradually mix in the following ingredients one by one: coconut sugar, oatmeal, baking soda, baking powder, salt, and flour.

Pour the batter into the prepared baking pan and spread it evenly with a spatula or the back of a spoon, smoothing the top. Bake the cake in the preheated oven for 45 to 55 minutes. It is done when the top is golden brown, and it feels firm and springy to the touch.

Let the baked cake cool in the pan for 30 minutes, then transfer it to a wire rack to cool completely. Once cooled, slice it into pieces and serve with a cup of your favorite hot beverage.
