Vegan Banana Donuts
Vegan banana donuts with chocolate glaze are essentially similar to banana muffins and banana bread, but I slightly changed their shape. Of course, they are best when made with bananas that are almost so brown they are ready to be thrown away – don’t! That’s when they are so sweet that they must be used for baking. The base batter is my go-to for baking because it always works and rises nicely. With vegan desserts, there can be a bit of a challenge when it comes to combining ingredients, but with the right amount of flaxseeds, baking soda, and apple cider vinegar, you can always achieve wonderful baked goods. However, it’s crucial to measure all ingredients precisely, and if you change one, you must be very careful with what you substitute it with.

320 g Banana, fresh

2 spoons Flaxseed

80 ml Coconut milk

80 ml Oil, plant, coconut

1 teaspoon Baking powder

210 g Wheat flour, white, multi-purpose

1 spoon Vinegar, apple

100 g chocolate, dark
Steps

Preheat the oven to 180 degrees Celsius. In a large bowl, mash the bananas and add ground flaxseeds, oil, almond milk, and vanilla. Mix and set aside.

In another bowl, thoroughly mix the dry ingredients: sugar, oatmeal, baking soda, baking powder, salt, and flour. Add the dry ingredients to the wet ones and gently mix until you get a uniform mixture. Finally, add the apple cider vinegar and mix the batter again.

Pour the batter into greased donut molds. Place the baking tray in the oven and bake the donuts for 20 minutes (if making muffins, bake them for 25 to 30 minutes).

Meanwhile, melt the chocolate over a double boiler and set it aside.

Remove the baked donuts from the oven and let them cool slightly. Then dip the tops into the melted chocolate and place them on a rack to cool completely.
