Vegan Banana Oat Pancakes
The ingredients of a popular breakfast, prepared in the form of delicious pancakes. No flour, white sugar, eggs, or dairy products. When serving, you can add plain or plant-based yogurt, or simply drizzle them with honey or maple syrup and sprinkle with chopped nuts.

130 g Oat bran, raw

1 piece Banana, fresh

120 ml Coconut milk

1 teaspoon Baking powder

0.25 teaspoons Spices, cinnamon, ground

1 teaspoon Vanilla, extract, natural

3 spoons Oil, plant, coconut

In an electric chopper or blender, add 100 g of oats and grind them finely.

Peel the banana and break it into smaller pieces. Add it to the ground oats along with plant-based milk, ground cinnamon, a tablespoon of coconut oil, baking powder, a pinch of salt, and vanilla extract. Mix well to form a uniform, medium-thick batter.

Stir the remaining 30 g of oats into the prepared batter. Let it sit for 15 minutes. During this time, the batter will thicken slightly.

Heat a pan well for cooking the pancakes. Add a little coconut oil, then tilt the pan left and right to evenly coat it.

Spoon two or three dollops of batter into the pan (depending on the size of the pan) and slightly flatten them with the back of the spoon to form pancakes about 10 cm in size (use about 1-2 tablespoons of batter for each pancake). When bubbles start to form on the surface, flip the pancakes with a spatula and cook the other side.

Remove the cooked pancakes from the pan and keep them warm on a heated plate covered with a lid. Repeat the process until all the batter is used. Grease the pan with oil as needed during cooking.

When serving, place three pancakes together on a plate. Optionally, drizzle them with a little honey or maple syrup and top with fruit and nuts. Coconut or soy yogurt is also a great addition.
