Vegan Cherry Brownies
We replaced eggs with a mixture of ground flaxseeds and water, and butter with plant-based margarine. We also added some ground almonds, cocoa powder, high-quality dark chocolate, and glazed cherries to create a dessert that youll fall in love with as soon as you try it.

2 spoons Flaxseed

80 g Margarine

120 g chocolate, dark

0.5 teaspoons Coffee, espresso

Preheat the oven to 170 degrees Celsius. Grease a 20 cm square baking dish with butter and line it with baking paper. Mix the flaxseeds with six tablespoons of cold water. Let it sit for 5 minutes. Rinse the cherries under running water and halve them (you can also cut them into smaller pieces).

In a saucepan, add the margarine, chocolate, coffee, sugar, and 60 ml of warm water. Place it on the stove and heat it slowly over moderate heat, stirring occasionally. Once you have a completely smooth mixture, remove the saucepan from the heat. Let the mixture cool slightly.

In a bowl, mix the flour, baking powder, ground almonds, cocoa powder, and salt. Add the soaked flaxseeds, vanilla extract, cherries, and finally the dry ingredients to the cooled chocolate mixture. Once you have a uniform batter, stop mixing.

Pour the batter into the prepared baking dish. Use a spatula or the back of a spoon to spread it evenly and smooth the top. Bake the brownie in the preheated oven for 30 to 40 minutes. It is done when the top is nicely baked, but the inside is still slightly "moist" and soft.

Let the baked brownie cool in the baking dish. Once cooled, cut it into equal-sized pieces, serve them on a plate or platter, and enjoy.
