Vegan Millet and Apricot Pudding

Ingredients

1.5 cups Millet, raw

2 cups Water

2 cups Soy milk

2 spoons Frying fat, coconut

1 handful Apricot, dry

Steps

Place the millet in a fine-mesh sieve and rinse it under running water until the water runs clear.

Transfer the rinsed millet to a pot and add two cups of water. Place it on the stove, and when the water almost boils, add plant-based milk, coconut oil, sweetener, and a vanilla pod split in half. Cook the millet, stirring occasionally, for about 30 minutes until it becomes completely soft.

Meanwhile, chop the apricots into pieces. Mix them with grated orange zest, orange juice, and ground almonds into the cooked millet, removing the vanilla pod. If the mixture is too thick, add a little more plant-based milk.

Preheat the oven to 180°C (350°F). Grease a round cake pan with coconut butter, then pour the prepared mixture into it. Spread it evenly across the surface and smooth the top.

Place the pan in the preheated oven for 40-50 minutes. The pudding is done when the top and sides turn golden brown. Serve the dessert warm or cold.
