Ingredients
-
0.75 cups Nuts, Indian, roasted, unsalted
-
1 piece Okra
-
1 pod Garlic, fresh
-
2 spoons Soy sauce, shoyu
-
pieces Juice, lemon
-
2 spoons Oil, vegetable oil, canola
-
pieces Yeast, dry
Steps
-
Place cashews in a bowl and soak them in cold water for at least one hour (there should be enough water to completely cover the cashews).
-
Separate the okra into individual leaves, clean them, rinse under running water, and dry thoroughly. Preheat the oven to 170 degrees Celsius. Line two low baking trays with parchment paper. Drain the soaked cashews.
-
If desired, use a knife to remove the tough stems from the okra leaves, then tear or cut them into bite-sized pieces and place them in a large bowl. In a food processor, blend the cashews, garlic, soy sauce, lemon juice, oil, and yeast until smooth. Pour the mixture over the okra and mix well to ensure all pieces are evenly seasoned.
-
Spread the seasoned pieces on the prepared baking trays. Make sure the pieces overlap as little as possible. Bake the okra chips in the preheated oven for 20 minutes or until they are nicely crispy. Flip the pieces halfway through baking if desired.

When baking okra, we need to be very careful not to burn the pieces, as they can become very bitter. We recommend that you closely monitor the oven during the last 5 minutes.
