Vegetable and Cheese Egg Bake
An excellent choice for a slightly heartier breakfast that we can treat ourselves to on the weekend before an outing or a longer walk. Since the bake does not contain flour, it is very light and fluffy.

Ingredients

1.5 dl Milk, whole milk

120 g Cheese, mozzarella

1 spoon Oil, olive

100 g Mushrooms, mushrooms, fresh

1 piece Broccoli, fresh

0.5 piece Bell pepper, red, fresh

50 g Cheese, Cheddar

Steps

Clean the mushrooms with a damp cloth and trim the ends of the stems. Slice them and quickly sauté them in a pan with a little oil. Let the sautéed mushrooms cool.

Clean and wash the remaining vegetables. Cut the broccoli into small florets and the bell pepper into pieces.

Preheat the oven to 180 degrees Celsius. Grease a deep rectangular baking dish (approximately 23 x 33 cm) with butter.

In a large bowl, crack the eggs and add salt and pepper. Whisk them well with a hand whisk, then mix in the milk and 3/4 of the grated mozzarella. Stir in the mushrooms and vegetables.

Pour the egg mixture into the baking dish and spread it evenly with a spatula. Place the dish in the preheated oven for 20 minutes.

Mix the remaining mozzarella with the grated cheddar and chopped chives. After 20 minutes of baking, sprinkle this mixture over the top of the bake, then return it to the oven for another 15 to 20 minutes.

Serve the bake while it is still warm. Offer bread on the side, and in the case of lunch or dinner, also a bowl of salad.

Advice
Instead of cheddar, you can use gouda or another cheese with a stronger flavor (parmesan, sheep or goat cheese, etc.). In addition to vegetables, you can also mix diced ham into the egg mixture. If desired, you can quickly sauté broccoli and bell peppers along with the mushrooms.
