Ingredients

Steps

Close the doors and windows to prevent drafts and warm up the room. Sift the flour into a large bowl. Make a well in the center, crumble the yeast cube into it, and add sugar. Sprinkle salt around the flour near the well. Add 2 tablespoons of oil and a little warm water to the well. Mix lightly with a fork and let it sit for five minutes to allow the yeast to rise.

Take an electric mixer and use the spiral hooks. Start mixing in the center of the well and gradually, as the dough thickens, pour in the remaining warm water until all the flour is used. Mix until you get a thick and smooth dough. Properly kneaded dough is elastic and does not stick to the bowl (hooks). Shape the dough into a loaf, grease it, and cover it with a cloth. Place the bowl in a warm spot and let the dough rise for 30 minutes until it doubles in size.

Clean the counter, dust it with flour, then turn the risen dough onto it and quickly knead it. Shape the dough into a loaf and let it rise in a warm place for 20 minutes.

Meanwhile, peel the potatoes, clean them, cut them into pieces, and wash them. Drain them into a pot and cook until soft (about 20 minutes). Wash the tomatoes and cut them into cubes, do the same with the sun-dried tomatoes. Peel and chop the onion, and crumble the feta. Place a pan on the stove and sauté the onion in a little olive oil until translucent. Transfer the sautéed onion to a bowl and mix with the tomatoes, feta, and cooked potatoes. Knead well so the potatoes break apart, and season everything with thyme, salt, and pepper.

Flatten the risen dough and place the vegetable mixture in the center. Cover the mixture with the dough, shape it into a loaf, and make sure the filling does not escape. Grease the baking dish with oil or butter and carefully place the prepared loaf in it. Let the loaf rise for another 15 minutes.

Crack an egg and separate the yolk from the white. Beat the yolk and brush it over the loaf. Preheat the oven to 220 degrees Celsius and place the baking dish with the bread inside. The bread is baked after 30 minutes or when it turns golden brown. You can also check by turning it over and tapping the bottom. If it sounds hollow, it is baked. Let the baked loaf cool, then slice it and serve.

Advice
The space where we bake the bread should be warm and draft-free. You can also use the oven – set it to heat to 50 degrees, then turn it off and place the dough inside.
