Vegetable Frittata
Theres nothing better than a healthy homemade snack at work. Frittata is a simple dish that can be prepared in 15 minutes. It serves as a quick lunch or snack, and with the addition of a salad and a fruit slice, it effortlessly becomes a full meal. The vegetable frittata was prepared by Tereza Poljanič.

Ingredients

8 pieces Egg, fresh

1 piece Sweet potato

2 piece Bell pepper, red, fresh

1 piece Cheese, feta

1 handful Spinach, raw

Steps

In a large bowl, whisk the eggs with a fork, add salt, pepper, and mix well.

Preheat the oven to 190 degrees Celsius. Dice the bell pepper and sweet potato. Heat oil in a deep ovenproof skillet. Add the bell pepper and sweet potato to the hot oil and sauté until soft. Shake the skillet well to evenly distribute the bell pepper and sweet potato, and optionally add spinach at the end.

Reduce the heat to low and pour the egg mixture into the skillet. Do not stir.

Crumble feta cheese over the egg mixture and arrange basil leaves on top. Cook the frittata on low heat for 5 to 6 minutes until the bottom is browned.

Then place the skillet in the preheated oven for 10 minutes to allow the frittata to cook through on top.

Cut the still warm frittata into slices and serve.
