Vegetable Layered Bake with Cheese
A delicious vegetable dish that you wont miss the meat, and it will definitely appear on your summer menu more than once. You can use different cheeses, so it will be slightly different each time. Try grated goat cheese, shredded mozzarella, or crumbled feta.

Ingredients

1 piece Eggplant, raw

2 piece Small pumpkins

500 g Tomato, red

250 g Cheese, mozzarella

1 bouquet Basil, fresh
Steps

Preheat the oven to 220 degrees Celsius. Slice the eggplant and zucchini into 1 cm thick rounds. Arrange them on two baking trays, placing tomatoes and garlic on half of one tray. Drizzle all the vegetables with olive oil and season with salt.

Place the trays in the oven, with the one containing tomatoes on the top rack. Bake for 20 minutes, then remove the trays from the oven. Flip the eggplant and zucchini slices and transfer them to one tray. Return this tray to the oven for another 10 minutes.

Meanwhile, mix the cottage cheese, 150 g of cheese, and 3 tablespoons of olive oil. Remove the skins from the garlic cloves and mash them with a fork. Stir the mashed garlic into the cheese mixture and season with salt to taste.

Lightly oil a baking dish measuring 30 x 20 cm. Arrange a third of the eggplant, zucchini, and tomato slices on the bottom. Spoon half of the cheese mixture over the vegetables and add some basil leaves. Continue with another third of the vegetables, then add the remaining cheese mixture and more basil leaves. Top with the remaining vegetables, sprinkle with the rest of the grated cheese, and bake in the preheated oven for 20 minutes.

Once the bake has cooled slightly, sprinkle with basil leaves and drizzle with olive oil. Serve as a side dish with meat or enjoy it as a standalone meal with bread.
