90 g Pasta, Macaroni

40 g Cheese, Parmesan, grated

Steps

Peel the onion and garlic, then finely chop them separately. Clean all the vegetables, wash them, and dry them if necessary. Chop the leek, and cut the remaining vegetables into roughly equal-sized pieces. Blanch the tomatoes in boiling water for 30 seconds, then cool them, peel them, and cut them into pieces.

Heat olive oil in a large pot and sauté the onion, garlic, and leek for 5 minutes, stirring occasionally. Add the chopped vegetables, bay leaf, and diced tomatoes. Sauté for another 2 minutes, then add enough liquid (water, broth) to fully cover all the ingredients.

Simmer the ingredients in the pot until all the vegetables are tender. Add the pasta and cook until it is done. Add more water or broth if needed.

While the stew is cooking, prepare the pistou sauce. Peel the garlic and grind it in a mortar with a little salt until smooth. Gradually add the basil leaves, and once you have a herb paste, drizzle in the olive oil. Mix well to create a thick and smooth sauce, seasoning with pepper and salt to taste.

Season the stew with pepper and salt to taste. Serve it in soup bowls (deep plates), garnish with a spoonful of pistou sauce, sprinkle with grated Parmesan, and serve.
