Vegetable Patties with Oats
These patties can be served as a cold dinner or a warm appetizer along with a refreshing cottage cheese sauce. They are also excellent as a standalone meal, paired with a large bowl of seasonal salad.

Steps

Clean the cabbage, wash it, and cut it into small pieces. Cut the florets from the broccoli stem, wash them under running water, and dry them. Cut them into smaller, roughly equal-sized pieces. Finely chop the parsley and peeled garlic.

Place the vegetables in cold salted water, bring to a boil, and let it simmer lightly for 2 to 3 minutes. Drain the partially cooked vegetables, rinse with cold water, and drain again. Rinse half of the oats with cold water and drain.

In a bowl, add the cabbage, broccoli, eggs, drained oats, chopped garlic, parsley, and spices. Mix the ingredients well with clean hands so that everything binds together nicely. Let the mixture rest in the refrigerator for 1 to 2 hours.

Mix the remaining oats and a little breadcrumbs into the cooled mixture. With wet hands, shape the mixture into patties or burgers, coat them in breadcrumbs, and place them on a clean plate.

Clean the spring onion, wash it, and chop it. Mix it with the cottage cheese and paprika. Season the mixture to taste with salt and freshly ground pepper.

Heat oil in a pan and fry the patties until golden brown on both sides. Drain them on paper towels and serve with the cottage cheese sauce in a small bowl.
