Vegetable Soup with Chicken Dumplings
A delicious soup that is perfect for a cold winter day. The base is a rich vegetable soup in which we cook tender chicken dumplings. For an extra touch, you can also add a bit of sour cream.

300 g Meat, chicken, ground

Steps

First, prepare the meat dumplings. Rinse the parsley under running water, dry it, and finely chop it. In a bowl, add the egg, ground meat, breadcrumbs, and half of the parsley. Season with salt and pepper, and mix well with your hands or a mixer to form a uniform mixture. Shape into small dumplings, place them on a tray, loosely cover with plastic wrap, and store in the refrigerator.

Peel the garlic and onion and chop them separately. Clean the celery, carrots, and potatoes, wash them, and cut them into pieces.

Place a large pot on the stove and heat the oil. Add the onion and sauté for 3 minutes, stirring occasionally, until it becomes translucent and soft. Add the garlic, celery, carrots, and potatoes, and sauté everything together over medium heat for another 5 minutes.

Pour in the broth and add the spices. Cover the pot and wait for the soup to come to a boil. Reduce the heat, partially cover the pot, and let the soup simmer gently for 40 minutes.

After 40 minutes of cooking, add the meatballs and the remaining parsley to the pot. Cook everything together for another 10 minutes or until the meatballs are cooked through. Taste the soup and adjust the seasoning with more salt and/or pepper if needed.

Serve the prepared soup in deep bowls or soup cups. Enjoy it while it's still warm.
