Vegetable Soup with Sausage

2 spoons Oil, vegetable oil, canola

1 piece Onion, raw

2 pod Garlic, fresh

0.75 spoons Spices, paprika

1 spoon Tomato, concentrate

500 g Potatoes, white

1 piece Bell pepper, red, fresh

400 g Tomato, pieces - can

1 piece Spices, bay (leaves)

800 ml Soup base, beef, cube

160 g Carniolan sausage

4 twig Parsley, fresh

0.75 teaspoons Salt, table

2 pinch Spices, pepper, black

Peel the potatoes, wash them thoroughly under running water, and cut them into smaller cubes. Wash the bell pepper and clean it (remove the stem and seeds), then cut it into smaller pieces. Peel the onion and garlic, and finely chop them.

Heat the oil in a pot, and sauté the onion over high heat for 2 minutes while stirring. Add the garlic, tomato paste, and ground paprika. Continue to sauté while stirring until the garlic becomes fragrant.

Add the potatoes, bell pepper, canned tomatoes, bay leaf, and soup base. Season with pepper and salt to taste. Reduce the heat, cover the pot, and simmer gently for 10 to 15 minutes. Slice the sausage into rings. After 15 minutes, add the sausage to the pot and cook everything together for another 10 minutes.

Rinse the parsley sprigs under running water, shake them well, and roughly chop them. Ladle the soup into bowls, sprinkle with chopped parsley, and serve. Bread can be offered as a side.
