Vegetable Spring Rolls

Ingredients

4 pieces Dough, wonton

1 piece Carrot, fresh

100 g Broccoli, fresh

100 g Alfalfa sprouts

2 spoons Oil, peanut

100 ml Soup base, chicken, cube

1 spoon Soy sauce, shoyu

4 spoon Oyster sauce

1 spoon Koruzni škrob

1 piece Egg, egg white, fresh

pieces Oil, vegetable oil, canola
Steps

Wash the broccoli and carrot. Separate the broccoli into small florets, peel (or scrape) the carrot and cut it into thin sticks. Wash the leek, clean it, and slice it into rings. Place a pan on the stove and heat one tablespoon of oil. Sauté the broccoli and carrot for 2 minutes. Then add another tablespoon of oil, soy sprouts, and leek rings, and sauté everything together for another 2 minutes while stirring.

Remove the sautéed vegetables from the pan. Mix the remaining liquid in the pan with one tablespoon of vegetable stock base. Then add soy sauce and oyster sauce. Mix everything well and bring to a boil. In a small bowl, mix cornstarch with two tablespoons of stock base, stir well, and add it to the pan. Add the sautéed vegetables back in, mix well, and remove from heat.

Crack an egg and separate the yolk from the white. Discard the yolk (or use it for another dish) and whisk the egg white in a bowl. Always take two sheets of dough together so they don’t fall apart during frying. Cut the dough into 10 cm squares. Place 2 tablespoons of the prepared filling in the center of each square, leaving at least 2 cm of dough empty around the edges. Fold the roll into an envelope shape and brush the ends with egg white.

Heat oil for frying in a wok and fry the rolls until crispy on both sides. Drain on paper towels and keep warm. Serve on plates and enjoy.

Advice
Instead of vegetables, you can fill the rolls with shrimp or minced meat. The oil is hot enough for frying when bubbles start to form around the handle of a wooden spoon dipped into it. Spring rolls pair well with light soy sauce.
