Steps

Peel and finely chop the garlic. Place a small pot on the stove and heat peanut oil in it, quickly sauté the garlic. Add sugar and stir until it dissolves. Pour in 5 tablespoons of water and soy sauce, and let it simmer for about 2 minutes. Mix cornstarch with one tablespoon of water into a smooth mixture, then stir it into the sauce. Remove the pot from the heat and let the sauce cool.

Thoroughly wash and separate the cauliflower and broccoli into florets. Clean the beans, wash them, and cut them into pieces of any size. Wash the zucchini and carrot, peel them, and cut them into short sticks. Place 1.5 liters of cold water on the stove and wait for it to boil. Blanch the beans, cauliflower, and broccoli in the boiling water for 3 minutes. Then drain the vegetables and rinse them with cold water.

In a separate bowl, mix exactly 150 g of flour with 300 ml of cold water. Add a pinch of salt and mix everything well again to get a smooth, runny batter.

Heat the frying oil in a wok. Place the remaining flour in a separate bowl and coat each piece of vegetable separately. Dip the vegetables into the batter and fry them in the oil until they turn golden brown. Drain the fried vegetables on kitchen paper, then serve them on plates. Reheat the sauce, pour it into a small bowl, and serve it alongside the fried vegetables.

Advice
Instead of the mentioned ingredients, you can also use other vegetables. We recommend shiitake mushrooms. Fry in a large amount of fat. The food must float in it. For frying, use fats that do not contain water, such as coconut fat or good oil. The frying fat is hot enough if small bubbles form around a wooden spoon.
