Vegetarian Tacos
These vegetarian tacos are truly something special. Instead of tortillas, we use lettuce leaves, and for the filling, we mix cooked lentils, walnuts, and sun-dried tomatoes. This creates a very tasty and quickly prepared snack that proves fast food can also be very healthy.

Ingredients
Guacamole

First, prepare the guacamole. Dice the avocado, onion, cherry tomatoes, and red chili, and finely chop the cilantro. Combine the ingredients in a bowl, season with lime juice, olive oil, and salt, mash well with a fork, and store in the refrigerator until ready to use.

Place the walnuts in a food processor. Add salt and spices, and finely grind the walnuts. Then add the lentils, cilantro, and sun-dried tomatoes, and quickly mix all the ingredients again to form a uniform mixture.

Clean, wash, and dry the lettuce leaves. Fill them with the prepared mixture of lentils, tomatoes, and walnuts. Top with a bit of guacamole and serve the prepared tacos.
