Venetian Mice with Vanilla Cream
A variation of the popular sweet fritters, prepared with a slightly different method. Since the dough is not leavened, you wont waste time waiting for it to rise. Venetian Mice will be especially delicious because of the vanilla cream, which makes them great even the next day.

Ingredients

240 ml Water

120 ml Milk, whole milk

25 g Butter, unsalted

50 g Sugar, white

1 pinch Salt, table

200 g Wheat flour, white, multi-purpose

5 g Baking powder

Steps

In a saucepan, combine water, milk, butter, sugar, and salt. Heat over medium heat until boiling, then add 150 g of flour and cook the mixture for a few minutes while stirring. Then transfer it to a bowl and let it cool slightly.

Mix in the eggs one by one into the mixture, and finally add the baking powder, the remaining flour (50 g), and lemon zest.

Heat oil in a large pot to 170°C. Using two spoons, shape the prepared dough into balls and place them in the hot oil. Fry for 10 minutes, turning them occasionally to achieve a beautiful golden brown color.

Place the fried mice on a plate lined with paper towels.

For the vanilla cream, mix milk, 50 g of sugar, and vanilla sugar in a saucepan. Heat over medium heat until boiling.

Meanwhile, in a bowl, whisk the egg yolk and egg. Add the mixture of the remaining sugar and cornstarch and mix well, then slowly pour in the hot milk while continuously stirring.

Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until the cream thickens. Remove from heat and stir in the butter.

Transfer the cream to a bowl and cover it with plastic wrap directly on the surface to prevent a skin from forming. Let the cream cool.

Generously fill the mice with the cream (using a piping bag if needed). Arrange them on a large plate or platter and dust with powdered sugar if desired.
