Venison Fillet in Cherry Sauce

Ingredients

800 g Game meat, deer, fresh

2 teaspoons Mustard

50 g Butter, unsalted

2 dl Alcohol, Wine, Red

200 g Cherries, fresh

4 pinch Salt, table

1 spoon Lemon zest, fresh

Wash and dry the venison fillets. Pound them well and season both sides with salt and spread with mustard. Wash the cherries, remove the stems, and pit them.

In a large pan, melt butter and sear the fillets; cook each side for 3 minutes. Transfer the cooked fillets to a warm plate. In the same pan, pour in the wine, add half of the cherries, and simmer everything over moderate heat for 5 minutes. Then blend the sauce well with a hand blender.

Return the meat and the remaining cherries to the pan and simmer everything over moderate heat for another 10 minutes. Add the lemon zest and stir. Increase the heat and wait for everything to come to a boil. Then remove the pan from the heat and transfer the fillets to plates. Pour the prepared sauce over them and serve.
