Walnut-Caramel Pie
Walnut-caramel pie is a true "energy bomb," so it certainly doesnt belong among the desserts you would indulge in every day. A small piece, enjoyed with a cup of strong coffee, will be enough.

Ingredients
Dough

180 g Wheat flour, white, multi-purpose

90 g Butter, unsalted

50 g Sugar, white

1 pinch Salt, table

1 piece Egg, egg yolk, fresh

Steps

First, prepare the dough. Sift the flour into a bowl and add the butter cut into cubes. Quickly rub the fat into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Add sugar, salt, egg yolk, and cold water, and quickly knead everything into a smooth dough with cold hands. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 190 degrees Celsius. Grease a round pie dish (24 cm in diameter) with butter and dust it with flour (remove any excess flour). Roll out the dough into a 0.5 cm thick circle and place it in the prepared dish. Gently press it against the bottom and sides of the dish with your fingers and prick it with a fork in several places. Trim the excess dough with a rolling pin. Cover the dough with aluminum foil (parchment paper) and place baking beads (dry beans) on top. Bake the dough base in the preheated oven for 10 minutes, then remove the beans and foil and bake for another 5 to 10 minutes. Let the partially baked base cool.

Place a pan with sugar and water on the stove. Heat the mixture slowly over low heat, stirring until all the sugar dissolves. Then increase the temperature and continue heating the syrup until it turns a beautiful caramel color. Remove the pan from the heat and stir in the butter, then the cream. Once you have a smooth and uniform mixture, return the pan to the stove. Cook while stirring continuously until the mixture thickens and you get a thick, golden brown caramel (when you drag a spoon across the bottom of the pan, it should leave a visible trail). Mix the walnuts into the prepared caramel.

Spread the caramel-walnut mixture evenly over the dough base. Bake the pie in the preheated oven for another 8 to 10 minutes. When the dough turns a nice golden brown, it's ready.

Let the pie cool in the dish for at least 10 minutes before serving. Serve warm or cold, with whipped cream or vanilla ice cream.
