Walnut Cookies with Chia Jam

First, prepare the chia jam. Blend the raspberries, honey, salt, and vanilla until smooth. Mix in the chia seeds and let it sit for at least 1 hour so the seeds can gel and form the jam.

Preheat the oven to 180 degrees Celsius. In one bowl, mix the dry ingredients (coconut flour, almond flour, walnut flour, cinnamon, vanilla, baking powder, and salt). In another bowl, mix the wet ingredients (egg, melted coconut oil, sweetener). Add the wet ingredients to the dry ingredients and mix well with a spoon until the ingredients are well combined and form a uniform dough.

Shape the dough into equally sized balls with your hands and place them on a low baking tray lined with baking paper. Use your finger to make small indentations in each ball and fill them with chia jam. Bake the cookies in the preheated oven for 10 to 12 minutes.
