Steps
-
Preheat the oven to 180 degrees Celsius. Separate the egg yolks and whites into two bowls. Add a pinch of salt to the whites and beat them into stiff peaks.
-
Beat the egg yolks with powdered sugar and sour cream. First, mix in the ground walnuts, then gently fold in the beaten egg whites.
-
Pour the prepared mixture into a greased baking dish, sized 35 x 25 centimeters, and bake in the preheated oven for 20 minutes. Let the baked sponge cool.
-
Whip the sweet cream. In another bowl, mix a deciliter of orange juice, sugar, and starch.
-
Heat the remaining juice in a small pot, adding grated orange zest. Once it boils, stir in the starch mixture and cook on low heat while stirring for 2 minutes.
-
Mix the whipped cream into the still-hot mixture, then pour the orange cream over the walnut sponge. Refrigerate to let the cream set.
-
Finally, prepare the whipped cream according to the package instructions and carefully spread it over the orange cream. Chill the dessert in the refrigerator for at least two hours before slicing. Optionally, garnish with walnuts and candied orange zest.

Advice
Instead of whipped cream, you can also use whipped heavy cream, to which you can optionally add a packet of Kremfix for a firmer consistency.
