Walnut Roll with Cream and Chocolate

6 pieces Egg, fresh

1 pinch Salt, table

5 spoon Sugar, white

5 spoon Walnuts

2 spoons Walnuts

0.5 bags Baking powder

0.5 l Sweet cream

Steps

Preheat the oven to 180 degrees Celsius. Line a rectangular baking tray measuring 25 x 35 cm with baking paper. Mix the ground and coarsely chopped walnuts with baking powder.

Separate the egg whites and yolks into two bowls. Beat the egg whites with a pinch of salt until stiff peaks form. Add sugar to the yolks and beat them until pale and creamy.

Using a spatula, first mix the walnut and baking powder mixture into the beaten yolks, then gently fold in the egg whites. Pour the mixture into the baking tray and spread it as evenly as possible. Bake the sponge in the preheated oven for 15 to 20 minutes.

While still warm, roll the sponge into a roll. You can roll it in baking paper or a clean kitchen towel and let it cool.

Whip the sweet cream together with vanilla sugar.

Unroll the cooled sponge and spread it with about half of the whipped cream. Carefully roll the sponge back up and place the roll on a serving plate. Spread the remaining whipped cream over the top and sides of the roll. Decorate with grated chocolate and chopped walnuts, then serve the prepared dessert.

Advice
You can mix a few tablespoons of sour cream or mascarpone into the whipped cream, and optionally add 1-2 tablespoons of chocolate liqueur.
