Walnut Roll with Sour Cream

70 g Wheat flour, white, multi-purpose

Steps

Preheat the oven to 180 degrees Celsius. Line a rectangular baking dish measuring 23 x 33 cm with baking paper.

Add a pinch of salt to the egg whites and beat them into stiff peaks. Add regular and vanilla sugar to the egg yolks and beat them for a few minutes until the mixture becomes lighter and fluffy.

Mix the flour with baking powder and fold it into the beaten egg yolks. Add the walnuts and mix well. Finally, gently and slowly fold in the egg whites with a spatula. Pour the batter into the baking dish and spread it evenly over the entire surface, smoothing the top. Bake the sponge in the preheated oven for 15 to 20 minutes.

While still warm, roll the sponge into a roll. You can roll it in baking paper or a kitchen towel and let it cool.

Mix the sour cream with vanilla sugar. Unroll the cooled sponge, spread it with the sour cream, and roll it up again. Chill the dessert well in the refrigerator before serving.
