Warm Cauliflower Salad
A quickly prepared dish containing only healthy, local ingredients. It can be served as a side dish or as a standalone meal. In this case, double the quantity of ingredients for four people.

Ingredients

1 piece Cauliflower, fresh

3 spoons Oil, olive

pieces Salt, table

2 piece Onion, raw

1 handful Walnuts

3 spoons Vinegar, apple

1.5 spoons Honey

50 g Spinach, raw
Steps

Preheat the oven to 200 degrees Celsius. Prepare a large baking dish, optionally lined with baking paper.

Wash the cauliflower and cut it into smaller florets. Drizzle with olive oil, season with salt, and spread them out in the baking dish. Place in the oven for 15 minutes.

Meanwhile, prepare the onion by halving it and slicing it into pieces. After 15 minutes of baking, add it to the cauliflower, mix, and bake for another 15 minutes.

Roughly chop the walnuts and dry-roast them in a pan for two to three minutes until fragrant and slightly browned.

In a small bowl, mix apple cider vinegar and honey.

Pour the dressing over the still-hot roasted vegetables. Add the walnuts and spinach, mix the ingredients, and the salad is ready.

Advice
The warm cauliflower salad can be prepared slightly differently each time. You can add cooked buckwheat porridge or lentils, mozzarella balls, or even boiled potatoes or roasted tofu cubes. This will make it more filling as a standalone dish. For a vegan version, use maple syrup instead of honey.
