1 piece Watermelon, raw

150 g Cheese, feta

1 twig Mint

1 handful Pine nuts

Cut the watermelon in half and slice each half into narrower pieces. Remove the flesh from the rind and cut it into 2 cm cubes. Use the tip of the knife to remove as many seeds as possible. Place the watermelon cubes on paper towels to drain excess juice.

Rinse a sprig of mint under running water and shake off the excess. Then, pluck the leaves from the stem. Place a pan on the stove and dry roast the pine nuts. Shake the pan several times while roasting to ensure even browning. Transfer the roasted pine nuts to a small bowl and let them cool.

Arrange the drained watermelon cubes on salad plates. Crumble feta cheese over the top and sprinkle with pine nuts. Tear the mint leaves into smaller pieces and scatter them over the salad. Serve the prepared salad.
