Steps

Clean the mushrooms, quickly rinse, dry, and finely chop. Peel, rinse, and chop the onion. Crumble the bread and grind it in an electric mixer. Transfer it to a bowl. Slice the seitan and also grind it in an electric mixer. In the bowl, mix the bread, seitan, mushrooms, onion, soy sauce, basil, and oregano. Place the kuzu in a cup, pour water over it, and dissolve it, then mix it into the mixture in the bowl.

Shape the mixture into balls with your hands; use about 2 tablespoons of the mixture for each ball. Place the balls on a tray. Heat oil in a deep pan. It should be hot but not smoking. When you drop a ball into the oil, it should not sink to the bottom.

Fry the balls until golden brown and crispy. Fry them gradually, a few at a time, so they do not touch each other in the pan. Place the fried balls on a plate lined with a paper towel to absorb excess oil.

Peel, rinse, and chop the onion. Clean the mushrooms, quickly rinse, dry, and slice them. Clean, rinse, and chop the spinach. Heat oil in a wide pan and sauté the onion until translucent. Add the mushrooms and sauté for 5 minutes, stirring occasionally. Add the spinach, quickly sauté, season with sauce, and pour in the broth. Cook for another 5 minutes and remove from heat.

Divide the mushroom and spinach sauce onto plates, add the fried balls, and serve.
